Dr Cheung is currently the Interim-Head of the Continuing Education Office (CEO) of PolyU SPEED, CPCE. He is also a Senior Lecturer of the Division of Science, Engineering and Health Studies and the Award Leader of the BA (Hons) in Business (Health Services Management). 

Dr Cheung received his BSc degree with a major in Life Science and Nutritional Science from the University of British Columbia (UBC) in Canada, his MSc in Nutrition, Food Science and Technology from The Chinese University of Hong Kong (CUHK), and his Doctorate from the University of Bristol in the United Kingdom.
Prior to joining this institution, Dr Cheung gained operational experience working in the healthcare and nutrition industry in Canada and Hong Kong. He also held different executive and research positions at the CUHK and UBC, where he managed a range of continuing and professional programmes, corporate training and consultancy services in industries including healthcare, finance and banking, tourism, city planning, business development, and manufacturing. 


Dr Cheung’s research involves Health Sciences, End-of-Life Care, Public Policy Evaluation, and Health Care Management. He is an author in various book chapters including “Good Health and Wellbeing: Re-calibrating the Sustainable Development Goal Agenda” (UNESCO) in 2019, “The Role of Higher Education in Healthy Lifestyle for the Ageing Population in the Future” (IGI Global Publications) in 2018.
He is a regular columnist in health magazines and a guest speaker in various professional seminars and TV programmes. He was awarded the Dr Jeffrey Lieu and Dr David Briggs Award in Outstanding Fellowship achievement in Australia in 2016; he was also a recipient of CPCE Outstanding Teaching Performance/Achievement Award in 2019. 
Dr Cheung is currently Fellow of the Hong Kong College of Health Service Executives, Fellow of The Hong Kong Association for the Advancement of Science and Technology, and Fellow of the Australasian College of Health Service Management.
